The Census of Agriculture is "a complete count of U.S. farms and ranches and the people who operate them." You can access the newest releases and data via the USDA website. The most recent Census of Agriculture is also included in a library database (with potentially a more user-friendly interface) called Social Explorer. The Princeton University Library has a LibGuide intended to guide users through using the Census of Agriculture, including historical censuses back to 1840.
